Baccala Soup
Ingredients:
- 1-1/2 pound salt cod, soaked overnight in cold water
- 3 tablespoons butter
- 1 large onion, finely chopped
- 2-3 celery ribs, finely chopped
- 3 cloves garlic, minced
- 2 large potatoes, peeled and cut into 1/2″ cubes
- 1 (14 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 4 cups chicken stock
- 4 tablespoons parsley, finely chopped
- Salt and pepper to taste
Instructions
- Soak the cod overnight in cold water, then drain and cut into pieces.
- Melt butter in a large pot over medium heat. Add onion, celery and garlic, and sauté until softened, about 5 minutes.
- Add potatoes, tomatoes, oregano, and red pepper flakes, and cook, stirring frequently, for 5 minutes.
- Add cod, chicken stock, and parsley. Bring to a boil, reduce heat to low, and simmer uncovered until potatoes are tender, 15-20 minutes.
- Add salt and pepper to taste.
- Serve hot and enjoy!
