A shaker lemon tart is a wonderful summer recipe that makes the perfect traditional dessert. It’s buttery, tart and incredibly delicious. Plus, it’s easy to make. This recipe combines a simple short crust pastry with a creme fraiche mixture, topped off with tangy and sweet lemon. The result is a tart that’s mouthwateringly good.
Ingredients:
For the crust:
- 200 g plain flour
- 50 g icing sugar
- 140 g cold butter, cubed
- 1 egg, lightly beaten
For the filling:
- 150 ml crème fraîche
- 150 ml double cream
- 40 g caster sugar, plus extra for sprinkling
- 4 eggs
- 2 lemons, juice and zest
Instructions:
1. Preheat the oven to 180°C. Grease a 25 cm tart tin.
2. To make the pastry, sift the flour into a bowl and add the sugar and butter. Rub the butter with your fingertips until the mixture resembles breadcrumbs, then add the egg and mix together. Knead the dough lightly until it forms a ball, then wrap in clingfilm and chill in the fridge for 30 minutes.
3. Roll out the pastry on a lightly-floured surface, then line the dish with the pastry. Prick the pastry with a fork and chill in the fridge for 15 minutes.
4. Line the pastry with greaseproof paper and baking beans. Bake for 15 minutes, then remove the paper and beans. Bake for a further 10 minutes until golden.
5. Meanwhile, whisk together the crème fraîche, cream, sugar, eggs and lemon zest and juice. Pour the filling into the pastry case and bake for 20 minutes.
6. Sprinkle with the extra sugar and bake for another 5 minutes, until golden on top. Serve warm or cold.
