- 1/4 teaspoon ground cayenne pepper
- 1 teaspoon Worcestershire sauce
- 2 tablespoons chopped fresh parsley
- Steamed White rice for serving
Cajun Sausage and Mushrooms Recipe
- 1 tablespoon vegetable oil
- 1/2 pound meaty mushrooms, such as cremini, sliced
- 1 pound Cajun or Smoked sausage, sliced
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1-1/2 cups chicken stock
- 1/4 teaspoon ground cayenne pepper
- 1/4 cup chopped fresh parsley
Instructions
Heat the oil in a large skillet or Dutch oven over medium-high heat. Add the mushrooms and sausage and cook, stirring occasionally, until the sausage is lightly browned, about 5 minutes. Add the onion, garlic and thyme and cook, stirring often, until the vegetables are tender, about 7 minutes. Stir in the flour and cook for 1 minute, stirring. Gradually whisk in the chicken stock, being sure to scrape up any bits that have stuck to the bottom of the pan. Bring to a boil, reduce heat and simmer until sauce has thickened, about 8 minutes. Stir in the cayenne pepper, and parsley and season with salt and pepper to taste.
