- 1 can kidney beans, drained and rinsed
- 6 cups vegetable broth
- 1 tsp thyme

- Add celery, carrots, and potatoes to the pot and cook for 5-7 minutes or until vegetables start to soften.

- Add thyme and rosemary to the pot and season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let simmer for 30-40 minutes or until vegetables are tender.
- Serve hot with crusty bread on the side.
