- 3 cloves garlic, minced
- 3 stalks celery, diced
- 3 carrots, diced
- 3 cups chicken broth
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons fresh parsley, minced (plus 2 tablespoons for garnish, optional )
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 8 ounces uncooked egg noodles
- 1/2 cup frozen peas
- In a large pot, heat 1/2 tablespoon of olive oil over medium-high heat.
- Add in the diced chicken and cook until lightly browned and cooked through, about 8-10 minutes.
- Remove the chicken from the pot and set aside.
- Add the remaining 1/2 tablespoon of olive oil to the pot and add in the onions, garlic, celery, and carrots.
- Cook until the vegetables have softened, about 5 minutes.
- Add in the chicken broth, pepper, salt, parsley, thyme, and oregano.
- Bring the mixture to a boil. Once boiling, add in the egg noodles and reduce the heat to low. Simmer for 10 minutes or until the noodles are cooked through.
- Stir in the chicken, frozen peas, and 2 tablespoons of fresh parsley (if using). Simmer for an additional 5 minutes.
- Remove from heat and serve hot.
