Cookies and Cream Chocolate Pudding Pie
Ingredients:
- 1/4 cup sugar
- 1 1/2 tablespoon cornstarch
- 2 cups whole milk
- 3 to 4 ounces semi-sweet chocolate, chopped
- 1 teaspoon pure vanilla extract
- 1 9-inch single crust, pre-baked
- 8 Oreo cookies
- 1/4 cup cold heavy cream
Instructions:
- In a medium saucepan, mix together the sugar and cornstarch. Stir in the milk. Cook over medium heat and bring to a boil. Cook for one minute, stirring constantly. Remove from the heat, and stir in the chopped chocolate and vanilla extract until the chocolate is melted and the mixture is smooth.
- Spread the pudding in the pre-baked crust. Cover and chill for 3 hours to overnight.
- To finish the pie, place the Oreo cookies in a plastic bag and pound with a rolling pin until finely chopped. Whisk together the heavy cream and the cookie pieces. Spread over the top of the pudding.
- Chill the pie for at least 1 hour before serving.
Real Butterscotch Pudding Cream Pie
Ingredients:
- 1/4 cup cornstarch
- 1/2 teaspoon fine sea salt
- 2 large eggs, lightly beaten
- 3/4 cup dark brown sugar, lightly packed
- 1/4 cup unsalted butter, melted
- 2 1/2 cups whole milk
- 2 teaspoons pure vanilla extract
- 2 tablespoons heavy cream
- 1/2 cup pieces of chopped butterscotch chips
- 1 9-inch single-crust pre-baked
Instructions:
- In a medium saucepan, mix together the cornstarch and salt. Stir in the eggs, brown sugar, butter, and milk.Whisk until smooth and no cornstarch lumps remain.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to the boil.
- Remove from the heat and stir in the vanilla extract and 2 tablespoons of heavy cream. Let the pudding cool for a few minutes, then carefully pour it into the pre-baked crust.
- Cover the surface of the pudding with pieces of butterscotch chips.
- Chill the pie for 3 hours to overnight before serving. Store any leftover pie in the refrigerator.
