CURRY CHICKEN RECIPE

• 2 cloves Garlic (minced)
• 1 large Onion (diced)
• 1 teaspoon ground Turmeric
• 2 teaspoons ground Cumin
• 1 teaspoon ground Coriander
• 1 teaspoon ground Chili Pepper (or to taste)
• 2 Tablespoons freshly grated ginger
• 1 teaspoon Salt (or to taste)
• 2 cans (14.5 oz each) Coconut Milk
• 2 Tablespoons freshly squeezed lime juice (or to taste)
• 2 Tablespoons freshly chopped Cilantro (for garnish)

Instructions:

Step 1: Heat olive oil in a large skillet over medium-high heat. Add garlic and onions and sauté for about 2 minutes until the onions are softened and the garlic is fragrant.

Step 2: Add the diced chicken thighs and cook until they are no longer pink.

Step 3: Add the rest of the ingredients (turmeric, cumin, coriander, chili pepper, salt and freshly grated ginger) and stir to combine.

Step 4: Pour in the coconut milk and bring to a simmer. Reduce the heat to low and let the curry simmer for about 30 minutes or until the chicken is cooked through and the sauce has thickened.

Step 5: Once the curry is done cooking, add some freshly squeezed lime juice and stir to combine. Taste and adjust the seasoning.

Step 6: Serve the curry with some freshly chopped cilantro on top and enjoy with some steamed rice and/or naan bread.
