This Homemade Caramel Ice Cream with Chocolate Chips is one of my favorite desserts to make when the weather warms up. It’s so delcious and creamy, and the combination of the homemade caramel with the delicious chocolate chips are the perfect combination. Plus, it’s easy to make and is a really budget friendly dessert. Here’s how to make it.
Ingredients
– 2 cups of sugar
-1/2 cup of light corn syrup
– 2/3 cup heavy cream
– 6 tablespoons unsalted butter
– 1/4 teaspoon baking soda
– 2 teaspoons vanilla extract
– 4 cups of heavy whipping cream
– 1/4 cup of light corn syrup
– 3/4 cup of sweetened condensed milk
– 1 1/2 cups semi-sweet chocolate chips
Instructions
1. In a medium saucepan, combine the sugar, light corn syrup and heavy cream. Cook over medium-low heat, stirring until the sugar has dissolved. Increase the heat to medium-high and continue to cook, stirring often, until the mixture reaches a deep golden caramel color. Remove from the heat and stir in the butter, baking soda and vanilla extract. Set aside to cool.
2. In a large bowl, beat the heavy whipping cream until light and fluffy. Add the light corn syrup, sweetened condensed milk and cooled caramel mixture. Beat on medium-high until well combined.
3. Pour the mixture into a 9”x13” baking pan. Sprinkle with the semi-sweet chocolate chips and freeze for 8 hours or overnight.
4. To serve, scoop the ice cream into bowls and garnish with additional chocolate chips, if desired. Enjoy!
