  • 1 and 1/2 cups almond meal or almond flour
  • 6 tbsp melted butter
  • 3/4 cup Erythritol
  • 2 tsp vanilla extract
  • 4 packages cream cheese, at room temperature
  • 4 eggs
  • 4 tsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup heavy cream

Instructions:

  1. Preheat oven to 350°F (180°C). Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, mix almond meal, melted butter, 3 tablespoons of erythritol, and vanilla extract until it resembles coarse meal.
  3. Press the mixture into the bottom of the prepared springform pan and bake in oven for 8 minutes.
  4. In a large bowl, beat the cream cheese until smooth, then add the remaining erythritol and beat until incorporated.
  5. Add eggs one at a time, beating after each addition.
  6. Add lemon zest, lemon juice, and heavy cream and mix until combined.
  7. Pour mixture into the prepared crust and bake in preheated oven for 25 minutes.
  8. Let cool for 1 hour before transferring to a wire rack to cool completely.
  9. Chill in refrigerator for 8 hours or overnight before serving.
