- To make the kulcha dough, combine the flour, baking soda, oil, and salt in a bowl. Knead the dough until it forms into a soft and pliable dough. Cover the dough and keep it aside to rest for at least 15 minutes.
- Make the aloo stuffing by heating the oil in a pan. Add the cumin, fennel, coriander, and amchur powders and mix it in. Now add the mashed potatoes, chilli flakes, coriander leaves, garam masala and a pinch of hing. Stir in all these ingredients until they are well combined. Fry the mixture on a low heat until it is dry. Keep the mixture aside and let it cool down.
- Divide the dough into equal portions. Grease the rolling surface with a little oil. Place a portion of the dough on the greased surface and roll it out into a circle (approximately 5 inches in diameter). Place the aloo stuffing at the center of the circle and spread it evenly. Bring up the edges of the circle and join them together in the center to make an inverted bowl shape. Seal the edges properly so that the aloo stuffing is locked inside.
- Heat a non-stick pan over medium-high heat. Place a kulcha on the hot pan. Cook the stuffed kulcha until it starts to puff up and brown spots appear on the surface. Flip it over and cook the other side.
