500g plain flour
3 teaspoons baking powder
150ml cold water
100g lard
Pinch of salt

Instructions

To make the pastry, sift the flour, baking powder and salt into a bowl. Using your fingers, rub the lard into the dry ingredients until a breadcrumb-like texture forms.
Add the cold water and mix until the dough comes together. Turn the dough out onto a lightly floured surface, knead gently then roll out into a large rectangle.
Roughly chop the sausage and place into a bowl. Peel and grate the onion and add to the bowl. Sprinkle over the herbs, then season with salt and pepper, then mix until all of the ingredients are incorporated.
Spread the sausage mixture along the middle of the pastry and roll up like a Swiss roll.
Cut into two-inch thick slices, place onto a baking tray lined with greaseproof paper and brush with egg.
Bake in a pre-heated oven of 200C for 25 minutes until golden brown. Serve warm with your favourite condiment.
