  • 2 cups plus 2 tablespoons all-purpose white flour or whole wheat flour or a combination of the two;

  • 2 tablespoons olive oil;

  • 1 teaspoon salt;
  • 1 cup lukewarm water;

In a large bowl, dissolve the sugar and yeast in lukewarm water. Add the salt and olive oil and mix gently. Add the flour and mix together until it forms a soft dough. Knead the dough on a floured surface for five to ten minutes, until it is smooth and elastic. Place the dough in a greased bowl, cover it with plastic wrap, and let it rest in a warm place for about an hour, or until the dough has doubled in size.

When the it has risen fully, punch it down, turn it out onto a lightly floured surface, and knead it a few times. Shape it into one or two loaves, and place it on a lightly greased baking sheet. Set aside covered by plastic wrap, and let rise a second time in a warm spot for roughly an hour or until doubled in size.

When ready, preheat your oven to 375°F (190°C). Bake the loaves for about 25 minutes, or until the top is golden brown and the bottom crispy. Let cool on a wire rack.

That’s it! The hardest part was the waiting, and it was worth it!
