2 (9-inch) unbaked deep-dish pie crusts
1. Preheat oven to 425˚F (220˚C).
2. In a large skillet, melt butter over medium heat. Add onion, and cook until tender: about 3-4 minutes.
3. Add flour, salt, and pepper. Stir until blended. Gradually stir in chicken broth and milk. Cook, stirring frequently, until thickened and bubbly. Reduce heat to low and stir in chicken, mixed vegetables, peas and parsley. Keep warm.
4. Place pie crusts into two 9-inch pie plates. Pour chicken filling in each piecrust. Cover with remaining pie crusts and seal edges. Cut several slits in the top crust.
5. Bake in preheated oven for 25-30 minutes, or until crust is golden brown. Let cool for 5-10 minutes before serving.
