Making the dough: Start with a mound of flour, then make a well. Next, crack the eggs into the well. Beat the egg with a fork and then start pulling in some of the flour with the egg. Once it has formed a dough, begin kneading the dough together until it forms a nice ball. The dough should be slightly sticky. Remove from the board, cover with a damp cloth and let rest for 15 minutes.

Now, it’s time to roll and cut the pasta. To roll the pasta, use a rolling pin to roll out the dough until it’s about 1/4” thick. You may also use a pasta machine if you have one available. Cut the pasta into the intended shape your recipe calls for.

Cooking the Pasta: Boil 4-6 quarts of water in a large pot and add 2 tablespoons of salt. Add the pasta to the boiling water and stir with a wooden spoon. Lower the heat to a simmer and then cook for 3-4 minutes, stirring occasionally. Making sure to never overcook the pasta.

Serving the Pasta: When the pasta is done cooking, drain it and serve it with your favorite sauce and a sprinkle of parmesan cheese. You may also add fresh herbs to your sauce (like oregano, basil, or thyme) for extra flavor.
