Instructions:

  • Press the “Saute” button on the Instant Pot. Add the olive oil, onion, pepper and garlic to the pot. Cook for about 5 minutes, until vegetables are softened.
  • Add chili powder, cumin, paprika and crushed red pepper. Stir together and cook for 90 seconds.
  • Add beans, diced tomatoes, green chilis, vegetable broth and salt and pepper. Give it a stir.
  • Secure the lid and turn the pressure release valve to the “Sealing”position. Press the “Manual” button and set the timer to 10 minutes on high pressure.
  • When done, wait 5 minutes and then carefully release the remaining pressure from the pot.
  • Stir the chili and taste for seasoning.
  • Serve the chili in bowls and garnish with cheese, sour cream, avocado or diced red onion.

  • When done, wait 5 minutes and then carefully release the remaining pressure from the pot.
