Stanley Tucci’s Classic Bolognese Recipe
Ingredients:
- 3 tbsp olive oil
- 1 large onion, chopped
- 2 celery stalks, chopped
- 2 carrots, peeled and chopped

Ingredients:
- 2 lbs potatoes (Yukon Gold or Russet)
- 2 cups all-purpose flour
- 1 egg, beaten
- Salt
Instructions:
- Preheat the oven to 425°F.
- Pierce the potatoes all over with a fork, then bake in the oven until tender (about 1 hour).
- Allow the potatoes to cool, then peel and mash them.
- In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.
