Ingredients
- 1-inch piece of fresh ginger, minced
- Salt and freshly ground black pepper, to taste
- 2 tablespoons vegetable oil
- 1 ½ pounds stew beef (preferably chuck), cut into 1-inch cubes
- 2 cloves garlic, minced
- 4 carrots, peeled and cut into ½-inch pieces
- 1 bay leaf
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon freshly ground black pepper
- 3 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 4 cups beef broth
- 4 potatoes, peeled and cut into 1-inch cubes
- 1 cup frozen peas
Instructions
- In a large bowl, mix together the ginger, salt, pepper, and vegetable oil.
- Add the beef cubes, garlic, carrots, bay leaf, garlic powder, cumin, paprika, oregano, thyme, and black pepper and mix together.
- Heat a large skillet over medium-high heat and add the beef mixture.
- Cook, stirring occasionally, until the beef is browned and the carrots are tender, about 8-10 minutes.
- Stir in the tomato paste and flour and cook for 1 minute.
- Add the beef broth and bring to a boil.
- Reduce the heat to low and simmer for about 10 minutes, stirring occasionally.
- Put the beef stew into the slow cooker and add the potatoes. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the beef and potatoes are tender.
- Stir in the frozen peas and cook for 10 minutes more.
- Season with salt and pepper to taste.
- Serve the stew with your favorite bread.
