Vegetarian Chili Recipe (My Favorite)
For this vegetarian chili recipe, you’ll need 1 teaspoon olive oil, 1 onion, 2 cloves of garlic, 1/2 red pepper, 1 green pepper, 1 zucchini, 1 carrot, 2 celery stalks, a 15-oz can of black beans, a 28-oz can of diced tomatoes, 1 tablespoon chili powder and 1/2 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 cup vegetable stock, 1 bay leaf and 1 teaspoon of sugar (optional).
Easy Vegetarian Chili
To get started, heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, bell peppers, zucchini, carrot, and celery and cook for about 7 minutes. Add the black beans, diced tomatoes, chili powder and paprika, salt and black pepper, and vegetable stock and stir. Add the bay leaf and sugar, if desired.
Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, stirring occasionally. Serve the chili with your favorite toppings such as shredded cheese, fresh cilantro, sour cream and diced avocado. Delicious!
How To Make Perfect Brown Rice
Making perfect brown rice using the stovetop method is easy. All you need is 2 – 2 1/2 cups of water, 1/2 teaspoon of salt, and 1 cup of uncooked long-grain brown rice. The ratio for brown rice is 1 cup uncooked brown rice to 2 cups water.
To get started, rinse the uncooked brown rice under cold water for a few seconds, then add it to a medium-sized pot with the salt and 2 cups of water. Bring the pot to a boil then reduce the heat to low, cover the pot and simmer for 45 minutes. Do not lift the lid while the rice is cooking. After 45 minutes, turn off the heat and let the rice sit, covered, for an additional 10 minutes. Fluff the cooked rice with a fork.
